Technology adoptedTraditional white wine production. Primary fermentation at 14°C. Secondary fermentation at low temperatures in an autoclave, where the spumante then continues its fermentation process for at least 6 months, favoring the dissolution of components from the disintegration of the yeast, which elevates its sensory characteristics.
